POSITION SUMMARY
The Banquet Captain is responsible for assisting in supervising and coordinating banquet events and activities of the service staff to ensure that member and guest satisfaction and presentation standards are consistently attained.

POSITION FUNCTIONS AND DUTIES:
  • Coordinate and supervise catered events based on client specifications documented on the Banquet Event Order.
  • Work with Food and Beverage Manager, Banquet Manager, Banquet Chef, and others to coordinate staff requirements for banquet functions.
  • Effectively and regularly communicate expectations and service goals to staff.
  • Maintain regular attendance in compliance with Club standards, as required by scheduling which will vary according to the needs of the Club.
  • Be knowledgeable of and always comply with the Club’s standards, and policies to encourage safe and efficient operations and ensure procedures for the service of alcoholic beverages are consistently followed.
  • Interact with banquet host or hostess to assure all needs are being met.
  • Supervise and direct banquet staff during all phases of catered events.
  • Assist with training, supervising, scheduling, and evaluating of banquet service staff.
  • Conduct daily line-up with wait staff and ensure personal appearance and grooming, which include wearing the proper uniform and nametag is attained.
  • Create teamwork and a functional working environment that is fun, safe, and productive.
  • Keep staff productive during off-peak hours.
  • Monitor and reduce staff to ensure appropriate staffing levels during down hours.
  • Coordinate food service between kitchen and banquet service staff.
  • Prepare and review table diagrams, guest tables and set-up needs for special functions.
  • Assure the neatness, cleanliness, and safety of all banquet areas.
  • Assist with inventory of all banquet service ware, equipment and supplies to meet required needs.
  • Monitor the safe and orderly storage of all equipment, glassware, silverware, and plate ware.
  • Assist the Food & Beverage Manager in the ordering, cost, and inventory controls.
  • Attend weekly BEO Meetings with Food and Beverage Manager to discuss events and set-ups.
  • Monitor employee and member activities in order to ensure all food and beverage departmental regulations are being met and exceeded.
  • Notify management of member and guest complaints.
  • Oversee set-up, service, breakdown of event, clean-up and reset of all club functions.
  • Open dining room and check fundamentals (lights, music, temperature, restrooms, dining room, table settings, chairs, floor, etc. and adjacent areas).
  • Attend department meetings and confer with managers to identify, plan, and develop methods and procedures to obtain greater efficiency.
  • Perform other duties as assigned by management.
EDUCATION/EXPERIENCE/SKILLS:
  • High School graduate or equivalent.
  • Previous fine dining and banquet experience.
  • Food and alcoholic beverage certification required.
  • Of legal age to serve alcoholic beverages.
  • Proven track record in successfully assisting all types of banquet functions and other special events.
  • Knowledge of the principles, procedures and equipment use in the storage, care, preparation, cooking, dispensing, and serving of food in large quantities.
  • Excellent listening skills, oral communication skills and positive interpersonal skills are required.
  • Ability to time the service of each course.
  • Good organization and follow-through skills.
  • Demonstrated results-oriented and capable of working with minimal direction.
  • Excellent team player with the ability to work hands-on in a fast-paced environment.
TYPICAL PHYSICAL AND MENTAL DEMANDS:
  • Required to stand for long periods and walk, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
  • Requires ability to perform a variety of manual labor tasks that will require some strenuous physical efforts, such as carrying, pushing, pulling, or lifting up to 50 pounds.
  • Continuous repetitive motions.
  • Must be able to convey information and ideas clearly.
  • Must be able to evaluate and select among alternative courses of action quickly and accurately.
  • Must work well in stressful, high-pressure situations and maintain composure and objectivity under pressure.
  • Must be effective in listening to, understanding, and clarifying the concerns and issues raised by members, guests, and staff members.
  • Must be able to work with and understand financial information and data, and basic arithmetic functions.
TYPICAL WORKING CONDITIONS
Work may be performed indoor or outdoor settings depending on the outlet. Varied weather conditions are expected with exposure to hot/humid, or cool/cold weather and a noisy environment. May work near toxic/caustic chemicals and with fumes or airborne particles. Duties are subject to change based on direction of the F&B department. Varying schedule to include evenings, holidays and extended hours as business dictates.
