Job Summary

The Global Culinary Director position entails being a part of the global team for a major Compass client, overseeing the food strategy, pantry program, and compliance with local regulations. As the Department Head, the role involves providing leadership and setting culinary excellence standards, collaborating with division leadership, and mentoring senior chefs. The Director will also stay updated on market trends, plan menus, ensure food safety, lead kitchen projects, and contribute to sustainability initiatives.


Key Responsibilities:

  • Form part of the global team for a major Compass client, ensuring effective collaboration.
  • Work closely with client representatives and global regional leadership to meet client expectations.
  • Oversee and plan the food strategy, ensuring alignment with client preferences and dietary requirements.
  • Manage the pantry program to provide a variety of quality food options.
  • Ensure compliance with all local regulatory requirements to maintain high standards of food safety and hygiene.
  • Communicate clearly and effectively with the client and team, ensuring all parties are informed and aligned.
  • Conduct tastings to assess the quality and flavor of dishes and stay current with culinary innovations.
  • Define and implement global standards for all locations to ensure consistency and quality.
  • Approve local variations that meet specific regional or cultural preferences.
Department Head and Culinary Excellence:
  • Provide strong leadership as the Department Head, setting high standards of culinary excellence.
  • Collaborate with division leadership to plan and implement new food concepts or programs.
  • Develop and mentor senior chefs across various Company divisions and regions, fostering their growth and expertise.
  • Create training opportunities for chefs and managers, utilizing external resources and promoting internal best practices.
  • Stay updated on market trends and customer demands, ensuring the menus are relevant and appealing.
  • Participate in trade shows and continuing education opportunities to stay informed about industry developments.

Menu Planning and Food Specifications:
  • Plan menus for daily offerings, seasonal specials, and catering services, considering diverse locations and applications.
  • Conduct food tastings to evaluate flavors, textures, and overall presentation.
  • Establish food specifications, ensuring consistency in quality and ingredients.
  • Work closely with food manufacturers and vendors to select the best products that meet quality and cost requirements.
  • Ensure strict adherence to local, state, and federal regulations regarding food products and handling procedures.

Kitchen Projects and Sustainability:

  • Contribute expertise in kitchen and servery design or remodeling projects, optimizing functionality and efficiency.
  • Lead culinary teams in planning, training, and successfully opening new or remodeled accounts.
  • Collaborate with other departments, such as Purchasing, Marketing, and Business Development, on special projects and initiatives.
  • Direct sustainability initiatives throughout Company locations, implementing practices to minimize environmental impact.
  • Oversee Nutrition staff and programs, ensuring the provision of healthy and balanced meal options.

Preferred Qualifications:

  • Hold a degree in Culinary Arts or possess equivalent professional experience, demonstrating a strong culinary foundation.
  • Have a minimum of five years of progressive culinary experience in high-volume, complex service, and catering operations.
  • Possess a minimum of two years of menu development experience, showcasing creativity and adaptability.
  • Display comprehensive knowledge of budgets, food and labor costs, and inventory controls, ensuring financial efficiency.
  • Demonstrate a thorough understanding of international cuisines and catering trends, providing diverse and innovative offerings.
  • Have a strong grasp of food equipment and safety standards, prioritizing hygiene and safety protocols.
  • Exhibit strong organizational, leadership, coaching, and training skills, fostering a positive and productive work environment.
  • Possess excellent verbal and written communication skills, facilitating effective collaboration and conveying information clearly.
  • Adapt to rapidly changing priorities and work demands, maintaining composure and delivering results.
  • Show self-starting qualities, innovation, and the ability to multitask in a fast-paced culinary environment.
  • Be capable of extensive travel, accommodating the need for global engagement and overseeing diverse locations.
