Dining and Hospitality Services falls within the Division of Student Affairs with this Director of Dining position reporting to the Executive Director of Auxiliary Services and working in conjunction with the Directors of various departments on campus from the University Center to Residential Life and Housing and campus Farm Manager. This position is responsible for oversight of all business and financial operations, culinary standards, team management, and development and vision of DHS.

Who We Are:

The mission of UCCS Dining and Hospitality Services (DHS) is to NOURISH and ENGAGE the campus community. DHS is a self-operated award-winning dining program that serves approximately 1 million meals per year across all operations. Dining and Hospitality Services is an auxiliary unit within the division of Student Affairs.

The UCCS campus has two residential dining facilities (the Lodge and The Roaring Fork) serving approximately 1300 first year students or 1200 meals daily. The retail operation includes one multi-unit self-operated concepts cafeteria (Café 65), one pub (Clyde’s Gastropub), and three Coffee Shops (Big Cat Coffee) located across campus. The retail components serve approximately 1000 students a day. The full-service catering operation serves over 1000 events a year ranging from small events of 10 people to large formal sit-down banquets of up to 350. Job Duties:

  • Engages stakeholders in identifying a strategic vision and action plan for DHS initiatives, programs, and services to articulate priorities related to budget, policies, planning, expansion, student development outcomes and collaboration for the evolving needs and interests of a diverse student population.
  • Works with Executive Director of Auxiliary Services to develop the annual DHS budget and supervises expenditures within budgets.
  • Serves as a steward of meal plan and auxiliary revenue by providing sound fiscal management through the continual monitoring of expenses and revenue within established budget, forecasting, research, and trend analysis.
  • Maintains accurate accounting records for all DHS programs and services.
  • Collects data comparing DHS utilization, revenue, and expenses each fiscal year and tracks trends that can be reported to upper-level leadership.
  • Researches and creates new ways to generate additional revenue.
  • Responsible for maintaining a culinary program dedicated to sustainable, high quality, and cost-effective ingredients.
  • Provides oversight in collaboration with the department Human Resources Liaison to DHS management on staffing, disciplinary actions, recruitment, and retention for staff and student employees.
  • Works in collaboration with the department HR Liaison to ensure professional development opportunities for all staff and student employees.
  • Responsible for scheduling and leading weekly management meetings.
  • Conduct periodic one-on-one meetings with all direct reports.
  • Responsible for working with all campus stakeholders to ensure the needs of the greater campus community are met through inclusive and diverse culinary offerings.
  • Works in collaboration with the Retail Development Specialist to communicate the DHS vision through marketing and storytelling.
  • Works in collaboration with the department HR Liaison to ensure all DHS staff and student employees are trained in food production and safety standards through the development of comprehensive and consistent training programing.
  • Works in collaboration with the Dining Associate Director and the Facilities team on the upkeep and maintenance of all Dining areas.
  • Develop and implement diverse programming and events including intentional menus regarding student learning and engagement in cooperation with First Year Experience, Residence Life and Housing, Orientation and Enrollment, Student Life, and other campus partners.
  • Develop and implement sustainability efforts to include sustainable food purchasing, compost, recycling, and the reduction of waste in conjunction with the Sustainability Office.
  • Address all special dietary needs of students in cooperation with the Culinary Team, Wellness Center Nutritionist, Office of Disability Services, and parents.
  • Make recommendations to the Supply Chain Manager for long- and short-term facility and equipment needs, utilizing customer and industry trends and staff input.
  • Approves all direct report timesheets and vacation and sick leave requests.
  • Implements changes in response to feedback and assessments.
  • Represent the department on university or community committees as needed.

This position has been determined to be exempt from the overtime provisions of the Fair Labor Standards Act (FLSA).

What We Offer:

Salary Range: Generally starting at $60,973 - $84,100 per year

The salary of the finalist(s) selected for this role will be set based on a variety of factors, including but not limited to, internal equity, experience, education, specialty and training.

This position is dependent on the availability of auxiliary revenues funding.

Tentative Search Timeline:

Qualifications

Minimum Qualifications:

  • Bachelor’s degree in hospitality, culinary arts, or a related field PLUS 6 or more years of management experience in a food service environment.
  • In lieu of a bachelor’s degree, an associate degree in hospitality, culinary arts, or a related field PLUS 8 or more years of management experience in a food service environment.
  • In lieu of a bachelor’s degree or associate degree, 10 or more years of management experience in a food service environment.

Preferred Qualifications:

  • A master’s degree from an accredited college or university.
  • Experience working in a higher education environment.
  • Experience with CBORD food management software.

Physical Requirements:

  • While performing the duties of this job, the employee is frequently required to move. Employees are occasionally required to have moderate bending, crouching, reaching, handling, fingering, moderate energy requirements, tasting/smelling, depth perception, color vision and good field of vision.
