The Chefs at the Inn at Perry Cabin are on a quest to return Chesapeake Bay cooking to its fundamental elements. The ideal candidate will convey the ambitious vision of Chef Gregory James (Chef of the Year 2022 in Maryland) and uphold the Inn’s unique traditions while continuously looking to innovate and progress.

The Junior Sous Chef responsibilities include:

• Ensure consistent and smooth running of food production
• Ensure that working areas are always kept clean
• Assist other kitchen staff as need arises
• Supervise performance of kitchen staff to ensure proper activity
• Perform other administrative tasks as will be communicated by culinary management
• Ensure that required standards are adhered to in the production and preparation of food – in quality, quantity and safety
• Work towards exceeding customer’s expectation by encouraging and promoting high level of service
• Give appropriate support or guidance to members of kitchen when need arises
• Promote good team spirit regularly
• Ensure all dishes are prepared according to specification and served at the correct quality, portion size, and temperature
• Ensure that the kitchen staff work harmoniously to ensure timely production of quality foods
• Resolve possible disputes within the kitchen and report any unresolved

Required qualifications:

• A passion for hospitality, food and beverage, and the guest experience.
• Passion for food: someone who enjoys the process of food preparation and creating menus
• A good sense of business; to be efficient and cost-effective
• Experience of working in a professional kitchen or similar position
• Effective communication skills
• Ability to pay attention to details
• Ability to multitask
• Ability to handle criticism and take feedback from management, guests and peers

Preferred qualifications:

• Certification of culinary training or apprenticeship required. Culinary degree preferred.
• Food Handling and Sanitation certificates preferred.
• Experience and/or training in the Culinary Department of a luxury hotel is preferred.
