POSITION OVERVIEW:
The Line Cook is responsible for preparing and cooking and serving meats, vegetables, and other foods as directed by the Executive Chef, Executive Sous Chef, and Sous Chef.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
Studies current and next day requirements of daily menus.
Confers with Sous Chef for menu requirements, and food supplies for preparation.
Prepares and cooks food, according to specifications, proper presentation, and in a required sanitary manner.
Portions food and issues to server upon order.
Identifies and selects cuts of meat, poultry, shellfish, fish, game or vegetables used for frying or sautéing.
Portions and prepares items for frying, sautéing, broiling, grilling and roasting.
Prepares pan sauces and garnishes as appropriate.
Ability to be creative with specials and discuss with Chefs and Sous Chefs.
Broils, grills, sautés, and plates meats, poultry, shellfish, fish, game or vegetable along with appropriate garnish.
Selects and uses knives, hand tools, utensils and equipment to portion, cut, slice, dip, batter, bread, whip, beat, maintain holding temperature, fry, sauté or otherwise produce food in the fry/sauté station.
Prepares all grilled foods according to menus and specials.
Assists in other food preparation (hot or cold) for other events as needed.
Reports to Sous Chef or other supervisor on food supply shortage or any other problem at the station.
Cooks hot side food items for banquets.
Breaks down the station in the end of each shift: turns off all equipment and lights, locks storage areas.
EDUCATION, EXPERIENCE, and TRAINING:
High school diploma or general education degree (GED) preferred; and two to three years related experience and/or training; or equivalent combination of education and experience.
Experience in food preparation and kitchen operation in a high quality/upscale environment preferred.
Experience working in a country club environment is preferred.
