ABOUT THREE BABES BAKESHOP

Three Babes Bakeshop is a San Francisco bakery known for our pies and pastries, which are made by hand using seasonal, organic ingredients from Northern California and Central Valley farms. Though we will soon be moving into our own space in the Mission District, we currently work out of a commercial kitchen in San Francisco’s Bayview neighborhood. Our products are available seven days a week for pickup at our kitchen and delivery anywhere in San Francisco. We also sell at the Ferry Plaza Farmers Market every Saturday and ship some items nationwide. We also provide desserts to select corporate wholesale accounts in the Bay Area.

ABOUT THE SALES TEAM:

The Sales team is responsible for sharing Three Babes Bakeshop – our products, values, and who we are – with the world. As the physical personification of our brand, the sales team is tasked with creating a “WOW!” experience for every customer, further building the value of our brand. Because our sales staff is the primary point of contact for customers, all team members should have a strong base of knowledge about our products and processes, and should take care to engage personally with our customers, many of whom have been ordering from us for years. Additionally, all members of the sales team should be ever vigilant in proactively considering our customers’ experience – the way our product, our website, and our sales staff appear to the customer – and working to continuously improve that experience. The Sales Team is an essential source of information on product and customer feedback for the Product Team. The Sales Team will also work to engage with customers about additional products they may not know about (ie, classes and corporate catering), and will assist in cross-promoting all of the goods and services we offer.


ABOUT THE ROLE: MARKET STAFF

As a member of our market staff, you’ll interact directly with our customers, our growers and our friends in the food community at our farmers market stand at the Ferry Building, where you will educate the public and sell our pies. At all times you’ll behave with courtesy and warmth, and you’ll be especially patient with older patrons. In your first few weeks you’ll learn the ropes – how we set up and break down the market stand, the procedures and protocols we follow, and who our customers and farmers are. It will be equally important that you become highly knowledgeable about our product – the names, descriptions, ingredients (and their origins), and the processes by which we make our pies. Because our processes are complex and our products are many, we prefer that all market staff also work on production in the kitchen – otherwise, it’s difficult to build the base of knowledge necessary to effectively engage with customers about our products. As an ambassador of our brand, any member of the sales team should be friendly and attentive at all times - for many of our customers, you will become the person they most associate with our company. As with all roles at Three Babes, attention to detail, respect for our customers and our staff, and the possession of a ride-or-die positive attitude are the values we prize most highly. Typically, you’ll work on a two-person team on Saturdays, and will correspond with our kitchen team and management team throughout the market day to communicate about inventory levels, customer details, and ongoing process improvements. Specific responsibilities are listed below.


Communication:

    *The market staff typically works in a team of two. One person serves as the market lead and the other as the market second. Both members of the sales team will communicate actively with each other to ensure that the day proceeds smoothly. *The Baking Operations Manager will communicate with the market team via the #sales channel the day before the market. Be sure to read the notes before the market begins, as they often contain information you need to know re: extra items to grab at the kitchen, new menu items, produce you’ll need to pick up, etc. *Additionally, the sales team will use Slack to correspond with the kitchen team and management throughout the day regarding inventory, customer info and orders, and additional notes about the day’s progress. *The market team will also interface with the Foodwise staff (the nonprofit that runs the Ferry Plaza Farmers Market). Foodwise's staff is there to help us, and should be treated with the same respect and warmth one would employ with members of our own team. *Other market sellers – we are part of a community at the market, and we try to help out other sellers when possible. This means loaning other vendors equipment if they need it, helping people out by trading them for smaller bills, or spotting them when they need to run to the bathroom. Just make sure our stand has the coverage we need before assisting others, and if you loan someone something, be sure to get it back at the end of the day or note in the #marketnotes channel on slack that we need to follow up later.

Sales:

The main function of the market team is to sell our products to customers in an efficient, respectful and friendly manner. This entails:

    *Engaging with customers to answer their questions and help them select products to purchase. *Accurately collect payments from customers via square on our iPad and in cash, and keep cash well-organized in the cash sleeve. *Respecting our patrons’ time, by working quickly and efficiently. *Providing world class customer service to anyone who approaches our booth, with particular attention to older patrons. *Collecting and transmitting customer information to management, should a patron’s question or concern be beyond your scope of knowledge. *Remaining aware at all times. We’ve had items like our ipad, our tip jar, and even our entire cash sleeve stolen. Be alert and follow our procedures to make sure this doesn’t happen to you!

Load In/Load out of market setup:

    *The market lead will arrive at the kitchen at 6am and clock in on Homebase, then gather all necessary items and finish loading the van, using the Trello checklist for guidance every time. *The Market Lead will then proceed to the market, where the Market Second will meet them to begin setup. *Together, the Market Lead and Market Second will set up the tent, front of house, back of house, and the pies we’ll be selling for the day, being sure to set up the back of house according to the regulations set forth by the department of public health. *Once setup is complete, a member of the team will move the van to the appropriate parking area for the day, being sure that the Foodwise parking pass is displayed. *At the end of the day, the market staff will break down the stand using the Trello checklist for guidance, dispose of all trash in the proper receptacles provided by Foodwise, and will load up the market setup according to the protocol laid out during training. (Otherwise, things won’t fit!) *The market team is responsible for putting all supplies back in the appropriate bins, and for thoroughly following the end of day checklists on Trello, to ensure that all necessary tasks are completed. *The market staff will be sure to be conscientious of the needs of our fellow market sellers during load-in and load-out, by taking care not to block other vendors’ stall spaces, and by working quickly and carefully to unload, set up, and move the van in a timely manner. Always treat your fellow vendors with courtesy and kindness. *At the end of the day, the market lead will return to the kitchen, bring in anything that needs to come inside, and properly store any fruit or pies that have returned from the market. Then, they will be responsible for parking the van in an appropriate place on the street nearby.

Slicing/packaging/serving:

    *The market team will be responsible for slicing pies, with special attention to the order in which they are sliced and to changing equipment with respect to allergens. The market team will package slices into clamshells, organize them according to pie type, and serve them to customers throughout the day, taking care to display all products in a tidy and attractive manner. *Typically, one person takes primary responsibility for manning back of house, and then will hop in to assist the other person on front of house when back of house duties are caught up. The market team will switch off on these responsibilities at various points throughout the day. *The person on back of house will be sure that as we begin to run low on slices, more whole pies are sliced, to avoid customer wait time and backups (situations in which several types of pie all need to be sliced at once). *Towards the end of the day, market staff will use restraint in replenishing slices of pie, to help us sell more of the slices that are already cut and to prevent an end of day glut of pie slices that can’t be sold.

Ongoing Maintenance of market setup:

    *The market team will set up signage in an attractive and inviting way, both on our magnet board and on the sandwich board. As pies sell out, market staff will remove signs to maintain an accurate display of the pies we are selling at the market. *The market team will keep back of house and front of house clean at all times, and will dispose of trash and recycling in the proper places (bins provided by Foodwise) throughout the day. *Additionally, the market team will keep all equipment clean on an ongoing basis, and will replace water in the dish setup as it becomes murky. *At the end of the day, the market team will wash and dry the back of house equipment, so that it’s put away clean and ready to go for the next market. *As our market setup experiences wear and tear, the market team will communicate with the office team via #marketnotes on slack, to identify any equipment that needs a touch up or needs to be replaced.

Inventory and reporting:

    *The market team will check in with the kitchen team via the #marketnotes channel on Slack to communicate regarding pie inventory, both midday and at the end of the day. *The market team will keep an accurate record on the market inventory sheet of pies that are returning to the kitchen, payment information (for any preordered pies that aren’t prepaid), and the time at which pies sold out.

Training:

    *All new market team members will complete three Saturdays of training. *All new market team members will complete at least three days of production to better understand our processes, recipes, and products. *After market team members are fully trained, they will help to train new members of the sales.

Produce pickups:

    *We often purchase the produce we need to make our pies from farmers who sell at the Ferry Plaza Farmers Market. Most Saturdays, one of the market staffers will need to pick up produce from one or more producers, and bring it back to the stand to be loaded into the van at the end of the day and brought to the kitchen. *Upon return to the kitchen at the end of the day, the market staff is responsible for putting produce away properly (usually into the walk-in so that it will remain fresh until the production team gets to it on Monday).


Feedback, Professionalism, and Continuous Improvement:

    *You will at all times work with a sense of urgency, and will vigilantly work to meet the standards of production speed and quality, professionalism, personal comportment, punctuality, organization, teamwork, and attitude set forth in the Three Babes Bakeshop handbook. *All staff will adhere to Three Babes Bakeshop’s Dress Code and will ensure that their team members do the same. *You will use Homebase to clock in and out, communicate their schedule and request time off. You will use Gusto to request sick pay and access information regarding paychecks. *All members of the market team will provide feedback to management in regular 1:1’s regarding the state of operations at the market and will present ideas for continuous operational improvement. Outside of the 1:1 and review process, staff members are not to engage in gossip or negative discussion of other team members or team members of organizations with which we conduct business. *All staff members will give and receive feedback in a professional manner, contributing to an overall environment of transparency and continuous improvement. Effort and motivation are most important.


Requirements:

    *Experience. No professional sales or baking experience is necessary, but you must be comfortable working on a team and must be comfortable giving and receiving feedback. You must also be able to do basic math. *Attention to detail: You must possess a strong attention to detail and be able to follow checklists, and directions. *Excellent organization/hygiene: Our market team is responsible for maintaining a well-organized, appealing and tidy display, and for keeping a spotlessly clean back of house at all times, following all requirements set forth by the department of public health. As ambassadors of our brand, our market staff must also maintain excellent personal hygiene and must comply with the Three Babes Dress Code while on shift. *Physical Requirements. You will be required to stand for the entire time you are working, and will need to lift 25 to 50 lbs on a regular basis. *Sense of urgency. You must work with speed and efficiency. As both Market Lead and Market Second, you’ll need work quickly to perform all necessary tasks at the beginning and end of day, and to meet the needs of customers throughout the day. *Communication. Three Babes has a positive and collaborative culture, and you must be able to resolve problems, accept feedback and communicate clearly in a positive way while remaining effective. Communication skills are particularly important when interacting with our customers! You must be able to read and write in English. *Self-starter. Our ideal candidate has no problem rolling up their sleeves and pitching in. We're looking for someone who's flexible, nimble, doesn't have an ego and is ok with getting their hands dirty. A positive outlook and sense of humor are a must! *Responsible Driver - This position requires that you be willing/able to drive our Ford Transit Connect, and that you have a valid California Driver's License.
