Responsibilities:
- Develop and modify as necessary individual specific diet plans
- Create menus for DDI personnel to follow
- Participates as appropriate in training of DDI personnel on menus, diet plans, and modified diets.
- Participates in IDT conferences as required
- Complete monthly and annual nutrition summaries
- Ensure compliance with OPWD regulatory standards
- Liaison with facility nurse regarding nutrition issues
- Routine observations on at least a quarterly basis of mealtimes for individuals with modified diets to ensure staff competency of meal preparation and diet appropriateness.
- Ensure provision of nutritionally adequate and acceptable quality food
- Ensure standards for sanitation, safety and security in food preparation and service.
