Position Summary:
The Registered Dietitian, Certified Diabetes Care and Education Specialist will provide individual and group diabetes, nutrition and cooking education for Type 1 and/or Type 2 Diabetes participants and families enrolled in Food is Medicine initiatives.
Essential Functions:
- Provide evidence-based diabetes, nutrition, and culinary intervention and education for participants in Food is Medicine initiatives (specifically: a pilot study for adolescents with Type 1 Diabetes; a community-based project for adults with Type 2 Diabetes from a primary care and healthcare facility)
- Manage client/participant case load for diabetes participants enrolled in Food is Medicine initiatives
- Collaborate with health care providers and clinical staff in team approach to care for participants with diabetes enrolled in Food is Medicine initiatives
- Participate in community based, culturally appropriate curriculum development as applicable to Food is Medicine initiatives
- Conduct cooking demonstrations and teach hands-on cooking skills with diabetes participants and families in Food is Medicine initiatives
- Participate in data collection, nutrition and cooking assessment, and evaluation as applicable to Food is Medicine research protocols
- Collaborate with Food is Medicine team on menu and recipe development using medical nutrition therapy for participants with diabetes
Required Education and/or Experience:
- RD/RDN as verified by Commission on Dietetic Registration (CDR) of the Academy of Nutrition and Dietetics
- Certified Diabetes Care and Education Specialist credential
- Master's degree in nutrition/dietetics or public health is preferred
- Current Missouri dietetic/nutrition license or ability to obtain license in the state of Missouri within the first three months of employment
- ServSafe® certification at Food Handler or Manager level or ability to obtain certification within three months of hire
Knowledge, Skills and Abilities:
- Excellent knowledge and skill in diabetes education, medical nutrition therapy across all types of diabetes
- Experience providing culinary nutrition education, able to teach basic cooking skills, and conduct cooking demonstrations
- Previous research experience a plus
- Ability to demonstrate cultural awareness, understanding, empathy, and humility
- Experience working with marginalized populations and those experiencing food insecurity
- Knowledge about Trauma-Informed Care and its implementation
- Experience working with multi-disciplinary teams and diverse systems of care
- Strong interpersonal, communication, and organizational skills
- Ability to take initiative and work independently, accepting of mentoring and supervision
- Ability to work on multiple projects simultaneously, if necessary
- Ability to establish positive interpersonal relationships with staff and colleagues, as well as external community for networking and partnership building
- Proficient computer skills with MS Office, PowerPoint, and Excel
Special Requirements:
- Local/regional travel may be required for participant education
- Flexibility in working hours, individual and/or group education sessions may/will occur in late afternoon/evenings
