Critical Success Capabilities:

Developing successful in-market launches is both an art and a science that requires balancing culinary and eating trends with food science and cost parameters. This role is ideal for the individual who strives for culinary delight while understanding and respecting the realities of successful commercialization in Food Service and Retail/Club channels.

This role is ideal for a person who wants to push the bar, be a leader in their field, a visionist with food, value added, premium brands and manufacturing. Keeping all said factors in play, who also crosses classical cooking technics with foods science to deliver the best items to the ever-changing market. Team player is a must.

Innovation Target Areas:*

  • Due to the nature of our projects, in-depth knowledge of food ingredients, process
  • engineering, food production, equipment utilization, and relevant food safety and quality requirements is needed. Knowledge and passion for seafood is a must!
  • Develop amazingly tasty seafood applications ‘to brief’, using client specifications,
  • guardrails, facility capabilities (and/or identification of new ones) and costs as guidelines.
  • Drive new product development from benchtop to factory scale up’s to product roll outs.
  • Ensure the product is optimally developed based on culinary, technical, food safety and shelf-life requirements.
  • Record and document variables at each stage of research conducted.
  • Prepare product cuttings and organoleptic testing for both Sales, R&D and customers.
  • Work in a product development process that allows flexibility for creativity but requires
  • adherence to timelines and budget.
  • Management of resources and budget on a project basis.
  • Complete administrative tasks in organizing ingredients, recipe input and data validation.
  • Prepare high-quality food item samples according to recipes and instructions, while
  • ensuring compliance with current good manufacturing practices.
  • Works close with Production, monitoring first production runs of new products.
  • Works close with technical team assuring they receive all data needed for labeling,
  • Has a strong knowledge base of current and upcoming industry trends. Areas of interest: Seafood, Food Manufacturing, Retail, Food Service, and packaging innovation.
  • Has a strong interest in trade journals, uses outside resources like the RCA, ACF, IFT and networking with colleagues and industry professionals in other areas.
  • Maintains good working relationships with team, internal and external.

Environment

While there will be a lot of autonomy over the product development process itself, product briefs will define success and clearly outline critical success factors, including timelines. Being part of the development of the brief and working to its conclusion will ensure that both your thoughts and ideas are incorporated from the onset, and the voice of customer is understood.

Some travel may be required domestic and international.

Skills and Knowledge:*

  • 5-10 years of culinary experience preferred
  • Pervious Research & Development (R&D) experience is a must
  • Strong culinary knowledge with current knowledge of latest food production techniques
  • Understanding of large-scale production and assembly, including HACCP and food safety
  • Ability to work in a fast-paced environment
  • Clear understanding of food service and retail customer experience
  • A team player who both shares and seeks feedback
  • Process Oriented and Results Driven
