Job Summary:
Responsible for assisting Supervisor with day to day operations in the kitchen with regard to proper utilization and storage of all food following Public Health and Catholic Charities regulations, procedures, and guidelines. Will also serve guests in a courteous manner that promotes human dignity.
Duties/Responsibilities:
- Assists SJB Supervisor by directing Breadline kitchen staff, volunteers and community service workers and performing work as necessary to assure that:
- Wholesome food items are served on a timely basis
- All food items, both donated and purchased, are used and stored in an efficient, safe, orderly and logical manner
- Food storage areas are maintained in a clean and safe manner
- Dishes, pots, pans, utensils, floors, kitchen equipment, walls and tables are washed daily, stored and otherwise maintained in compliance with all Health Department and SJB regulations and guidelines
- Oversees the operational food and supply inventory needs and maintenance of these.
- Evaluate quality of food donations and creatively use them each day to promote efficiency and cost control.
- Courteously interact with guests while enforcing SJB rules with firmness and sensitivity.
- Welcome, train, assist and manage volunteer groups and individuals
- Keep written documentation of daily refrigeration/freezer temperatures; daily food preparation in accordance of Health Department regulations; daily meal counts for data reporting and attendance sheets for volunteers and community service workers.
- Enforces SJB rules with sensitivity, firmness, dignity, and respect for the staff, guests, and community service workers. This requires the shift manager to be present in serving areas throughout serving times.
- Manages donated food items focusing on directing daily prep to decrease food waste and increase cost-effectiveness.
- Informs Supervisor of kitchen and building maintenance and/or equipment issues.
- Completes orientations for community service workers in absence of Supervisor
- Attend weekly meeting with Supervisor to address issues and discuss goals and direction of SJB programs. Implement ideas, policies, regulations, rules and guidelines provided by Supervisor with volunteers, community service workers and other kitchen staff.
- Addresses behavioral and/or operation issues within the kitchen with dignity and respect. Utilizes corrective actions such as verbal and/or written warnings to address workplace behavior that is not consistent with employee code of conduct, health and safety guidelines.
- Other duties as assigned.
Required Knowledge/Skills/Abilities, Education and Experience:
- Knowledge of kitchen sanitation and safety regulations and the ability to maintain sanitation and safety standards in the kitchen area.
- Ability to store food products in compliance with safety practices (e.g. in refrigerators).
- Excellent organizational skills.
- Conflict management abilities.
- Ability to manage a team in a fast-paced work environment.
- Ability to work a flexible schedule including night, weekends and holidays.
- Must have compassion for the low income population
- At least two years of work experience as a Kitchen Manager.
- High school diploma or GED required.
- Certification from a culinary school or a degree in Restaurant Management is a plus.
