Job Summary:
The Pastry Cook is responsible for dessert preparation that exceeds quality, quantity, and service schedule requirements and hospitality service standards for the senior living community. Responsible for ensuring the production of all desserts for residents, guests, and for special events.
Essential Duties:
· Responsible for creating seasonal dessert menus and recipes, for IL, AL, and SNF.
· Responsible for the scratch preparation and presentation standards of all menu desserts including catering, breakfast meetings, luncheons and to-go orders.
· Sets up, maintains, and breaks down station according to food operating guidelines.
· Maintains accurate counts on all food items prepared, ensuring no discrepancies in amount of food needed verses amount of food prepared.
· Adheres to departmental safety/sanitation and infection control procedures.
· Responsible for the production, inventory, organization, storage and rotation of all dessert items ensuring they are covered, labeled and dated accordingly adhering to new 3-day dessert rotation.
· Responsible for the supervision of Am Utility. Notifies Sous Chef and/or Executive Chef of any call outs, product shortages, and equipment maintenance issues.
· Supervises and trains staff utilizing a job card and to do lists to ensure job duties are continued in Pastry Cook’s absence.
· Oversees the set up and break down of all internal catering events, when assigned.
· Is responsible for ordering products for desserts through approved vendors.
· Share the responsibility for providing and maintaining a safe environment.
· Good steward of money, supplies, equipment in a cost-effective manner; maintains a clean and orderly environment; avoids wasting resources.
· Completes assignments thoroughly and correctly with appropriate supervision. Maintains high work quality, even under pressure.
· Serves, supports, and communicates with other associates to accomplish common tasks and reach goals, a cooperative team member.
· Displays a clear understanding and ability to perform the assigned job responsibilities. Learns new skills and acquires needed knowledge.
Experience and Qualifications: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.
Education or Degree Required:
§ Education: A.A.S. or Certificate in Culinary Arts or Food Service Management
Licenses, Certifications, Registrations: ServSafe, Food Handlers
Related Skills and Experience:
§ PC Skills: POS Register System, MS Word, Excel, Publisher, and Outlook or other networked systems.
§ 2-5 years as a Pastry Chef/Executive Pastry Chef in a retirement community, healthcare, or restaurant setting.
§ Must have problem solving abilities, be self-motivated, and organized.
§ Must be 18 years of age or older.
